Switzak  has made an excellent application that allows Ubuntu users to customize a monochrome icon set with different styles, the way they like.

With 'Any Color You Like' (ACYL), you can change colors of icons, apply 5 different filters and choose 6 different folder styles. Also six different distribution logos come with application. You can choose your custom logo too. There can be 'n' number of different combinations and styles.

You can download ACYL from here
Instructions:
  1. Extract the ACYL folder from the downloaded archive.
  2. Copy the folder to home/user/.icons
  3. Open Terminal and run the following command: cd ~/.icons/ACYL_Icon_Theme_0.9/ && bash AnyColorYouLike
  4. A new window will open. Go to other tab. Enter your password and select create menu icon as shown in the image below. This will make a permanent menu entry into System > Preferences so that you can access GUI anytime.

Now you can customize the icons the way you like. Some more screenshots:

Note: If you can't find a menu entry, log out and come back.
